I've found a couple simple recipes that involve limes and I can't stop consuming them. So, since it has been FOREVER since I've posted (which is mostly due to the fact that my camera's batteries died and I'm too lazy to go get new ones), I will share these recipes and heartily encourage you to buy a bag of limes. It's summer and it's worth it.
Recipe #1:
Honey Lime Chicken Sandwich with Cilantro-Lime Mayo

Chicken Glaze:
1 lime, juiced
2 Tbsp. honey
1 1/2 tsp. cumin
1 1/2 tsp. Montreal Steak Seasoning
2 Tbsp. extra-virgin olive oil
Cilantro-Lime Mayo:

1/2 tsp. grated lime rind
juice from one lime (a couple teaspoons)
1/3 c. mayo (or miracle whip if mayo makes you dry-heave)
1 Tsp. finely chopped cilantro
a few shakes of cayenne pepper OR a few shakes of tabasco sauce (I use a little cayenne pepper because I don't have a high tolerance for spicy food, but I like the subtle kick it gives to this)
Mix ingredients for the glaze in a bowl and place 4 medium boneless, skinless, chicken breasts in with all that goodness and let it marinade for at least 15 minutes. While you are waiting, mix up the cilantro-lime mayo and toast the hamburger buns (or whatever type of buns you want) on your grill or in the oven. Now, grill or fry the chicken in a hot skillet, until both sides are browned and glaze has caramelized (about 6 minutes per side). I assemble the sandwich like this: Bottom bun, generous slather of lime-mayo, grilled chicken, swiss cheese, 2 fresh tomato slices, a couple leaves of lettuce, and the top bun with more of that lime-mayo shmeared on it.
Although I have never tried it, if you like avocado, I just know a couple slices of avocado would taste delish with this.
I first tried out this recipe (which I adapted from a Rachael Ray recipe) last week, and I have had it 4 times since then. So good.
Recipe #2:
Limonada Suiça or Swiss Lemonade- Brazilian Style

This recipe was created by trial and error. For those of you who have lived or currently reside in Utah, you have probably, at one time or another, eaten at Tucanos. If you have eaten there, chances are you have tried the Brazilian Lemonade. I LOVE THIS LEMONADE!!!! When I went to Brazil, however, every time I ordered "limonada" They served it unsweetened, and gave me several packets of sugar to sweeten it to my taste. ugh. I wanted the creamy goodness from Tucanos! That is when I discovered in Brazil they call it Limonada Suiça or Swiss Lemonade. Ya know why? Because of one special ingredient: sweetened condensed milk. Ok, so, I don't like my lemonade (or in this case it's technically limade), REALLY tart, so this recipe is sweet enough that it takes away the so-tart-it-makes-your-teeth-squeak taste, but not so-sweet-that-you-get-a-headache-from-the-sweetness. If you like that tart taste, reduce the milk measurement to 1/3 can, and the sugar measurement to 1/2 cup. Here ya go.
3 whole large limes, cut into quarters (do not take off the rind)
3 c. water
1 c. ice
1/2 can sweetened condensed milk
3/4 c. sugar
Blend all together in a blender for about a minute (until no more large chunks-- little chunks of lime-ok). Fill 3 large glasses about 1/2 full with ice. Pull out your strainer, and pour the juice through the strainer over a glass, until the glass fills up with juice. It's ok if there are a few small rind chunks that make it into the glass. Empty the strainer and repeat this process for the next two cups.

ReplyDeleteI love Brazilian Lemonade!! It is so good, easy, and refreshing. I also found an awesome recipe for an easy Key Lime pie, if you're interested. It's supposed to be made from Key Limes, but you could substitute regular limes.
